Caramelized pork on a bed of pickled grape salad, ready in 25 minutes!
Ingredients:
  • 100g green grapes, halved
  • 100g red grapes, halved
  • 40.00 ml red wine vinegar
  • 36.40 gm olive oil
  • 28.60 gm honey
  • 4 x 150g Pork Scotch Fillet Steaks or Sirloin Steaks
  • 11.80 gm Dijon mustard
  • 1 red oak lettuce, leaves separated
  • 60g pkt Baby Rocket
  • 1/2 red onion, thinly sliced
  • 50g walnut
  • 100g goat’s cheese, crumbled
Instructions:
  • In a bowl, mix grapes with vinegar, oil, and honey. Season with salt and pepper. Toss everything together and let it sit for 15 minutes to pickle.
  • Preheat a barbecue grill or chargrill over medium heat. Rub sugar onto the pork and season generously. Lightly spray with olive oil, then cook for 2-3 minutes on each side until the pork is caramelized and cooked to your preference. Transfer the pork to a plate, cover it with foil, and let it rest for 5 minutes before serving.
  • Separate the grapes from the vinegar mixture, keeping the vinegar mixture. Combine the reserved vinegar mixture with mustard in a screw-top jar and shake vigorously until mixed well.
  • In a large bowl, combine lettuce, arugula, onion, walnuts, and grapes. Drizzle with dressing and toss to coat. Top with goat cheese and serve alongside the pork.
