Ingredients:
  • 2 (300g each) pork fillets, trimmed
  • 1 large red onion, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 45.00 gm firmly packed brown sugar
  • 40.00 ml balsamic vinegar
  • 600g jap pumpkin, cut into 1.5cm-thick wedges
  • 1 long red chilli, thinly sliced
  • Steamed green beans, to serve
Instructions:
  • Preheat oven to 200°C/180°C fan-forced. Heat oil in a frying pan over medium heat, then cook pork until golden on all sides. Transfer pork to a plate. In the same pan, sauté onion and garlic until softened. Add sugar and vinegar, bring to a boil, then simmer until slightly thickened. Return pork to the pan, coat with the mixture, and remove from heat.
  • 1. Layer 2 sheets of baking paper on a flat surface. 2. Arrange half of the pumpkin slices slightly overlapping in the center of the baking paper. 3. Top the pumpkin with 1 pork fillet. 4. Sprinkle half of the chilli over the pork. 5. Spoon half of the onion mixture over the pork.
  • Fold 2 long sides of the baking paper towards the center to seal. Roll up the short ends to enclose the filling, then tie securely with kitchen string. Repeat with the remaining baking paper, pumpkin, pork, chili, and onion mixture, placing each parcel on a baking tray.
  • Bake the pork in the parcels for 22 to 25 minutes until cooked through. Allow to sit for 5 minutes, then carefully unwrap parcels. Slice the pork thickly. Plate by dividing pumpkin, pork, and sauce evenly. Serve with beans.
