Caramelize ham for a festive Christmas feast.
Ingredients:
  • 6kg cooked leg ham
  • 275g jar cranberry sauce (see note)
  • 30.00 ml balsamic vinegar
  • Cloves, to decorate
Instructions:
  • Position the oven shelf on the lowest level and preheat the oven to 180°C/160°C fan-forced. Using a small, sharp knife, cut 8cm from the shank to remove the ham rind. Gently separate the rind from the fat and discard it. Score the fat in a diamond pattern and place 1 clove in the center of each diamond for decoration. Set the ham on a wire rack inside a large roasting pan.
  • In a microwave-safe jug, mix cranberry sauce and vinegar, then microwave on HIGH for 20 to 30 seconds until warm and smooth. Brush half of the cranberry mixture over the ham, and cover the shank end with foil to avoid burning.
  • Brush the cranberry mixture over the dish halfway through baking, and continue baking for 45 minutes to 1 hour or until the glaze caramelizes. Serve hot.
