Gather loved ones for a Christmas feast featuring juicy rolled pork roast.
Ingredients:
  • 1.5kg boneless rolled pork loin
  • 9.20 gm vegetable oil
  • 2 tsp cumin seeds
  • 2 tsp fennel seeds
  • 1 tsp dried chilli flakes (optional)
  • 4.80 gm sea salt
  • 25g butter, chopped
  • 2 large red onions, halved, thinly sliced
  • 146.25 gm whole-berry cranberry sauce
  • 40.00 ml balsamic vinegar
Instructions:
  • Preheat your oven to 220°C/200°C fan-forced. Put the pork in a big roasting pan. Pour 1/2 cup of cold water into the pan. Massage oil into the pork. Season with cumin, fennel, optional chilli, and salt. Roast for 15 minutes.
  • Lower the oven temperature to 180°C/160°C fan-forced. Continue roasting for 1 hour 15 minutes, or until the pork is fully cooked. Cover the pork with foil and let it rest for 10 minutes before slicing.
  • In a medium saucepan over medium heat, melt butter. Add onion and cook, stirring, until soft for 8 to 10 minutes. Stir in cranberry sauce and vinegar, cook until thickened for 3 to 4 minutes. Serve the pork with the relish.
