Roast Pork Loin with Crumb Crust

Elevate your Christmas dinner with a succulent pork loin crusted in flavorful Progresso™ bread crumbs.
Ingredients:
  • 1 boneless pork loin roast (4 1/2 lb)
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 cup Progresso™ plain bread crumbs
  • 1/4 cup olive oil
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons finely chopped garlic
  • 2 tablespoons coarse-grained mustard
Instructions:
  • Preheat the oven to 425°F. Line a broiler pan with foil. Season the pork with salt and pepper, then place it in the pan fat side up.
  • Combine bread crumbs, oil, parsley, garlic, and mustard in a small bowl, then press the mixture onto the pork.
  • Roast uncovered for 15 minutes, then cover loosely with foil and roast for an additional hour or until a meat thermometer inserted into the center of the pork reads 145°F. Allow it to stand for 3 minutes before slicing.
