Easy roast pork loin with potatoes. Pair with veggies and salad for a delicious meal.
Ingredients:
  • 6 medium potatoes, peeled and quartered
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon garlic powder
  • 1.5 teaspoons chopped fresh chives
  • 1 (4 pound) boneless pork loin roast
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Boil the potatoes in a pot of water for 10 minutes. Drain, cool, and transfer to a bowl. Mix in olive oil, 1/2 teaspoon thyme, 1/2 teaspoon garlic powder, chives, salt, and pepper.
  • Massage the pork loin roast with a flavorful mix of 1 teaspoon each of thyme, garlic powder, and onion powder. Season generously with salt and pepper.
  • - Simply place the roast on a rack in a shallow roasting pan and cook in the preheated oven for 50 minutes. - Add the potatoes around the roast and cook for an additional 50 minutes until the internal temperature reaches 145 degrees F (63 degrees C). - Remove from the oven, cover with foil, and let it rest for 15 minutes before slicing.
