Herb-crusted pork roast: tender, juicy, and bursting with flavor, perfect for a fancy at-home dinner.
Ingredients:
  • cooking spray
  • 5 cloves garlic, minced
  • 1 tablespoon dried sage
  • 1 tablespoon kosher salt
  • 1 (5 pound) pork loin
  • 0.25 cup apple cider vinegar
  • 3 tablespoons water
  • 1 tablespoon Dijon mustard
  • 1 tablespoon cornstarch
Instructions:
  • Preheat your oven to 450°F (230°C), then line a rimmed baking sheet with foil and give it a quick spray of cooking oil.
  • In a small bowl, mix garlic, sage, salt, and pepper to create a flavorful rub. Massage the mixture onto all sides of the pork. Transfer the seasoned pork onto the baking sheet.
  • Roast in the oven until golden brown, approximately 20-25 minutes.
  • As the pork simmers, combine vinegar, water, soy sauce, brown sugar, mustard, and cornstarch in a small bowl, whisking until smooth.
  • Once the pork is nicely browned on top, take it out of the oven and lower the oven temperature to 325 degrees F (165 degrees C).
  • Brush the pork tenderloin with half of the glaze mixture. Roast until the internal temperature reads 145 to 150 degrees F (63 to 65 degrees C), approximately 45 minutes. Drizzle the remaining glaze over the pork in the final 5 to 10 minutes of cooking.
  • Cover the dish loosely with foil after removing it from the oven and let it rest for 10 to 15 minutes.
  • Serve the sliced pork with the delicious pan drippings and juices.
