Herb-roasted chat potatoes

Classic crispy roast potatoes, perfect for any hearty Sunday meal.
Ingredients:
  • 9.60 gm sea salt
  • 8 fresh sage leaves
  • 20.00 ml fresh thyme leaves
  • 20.00 ml fresh rosemary leaves, chopped
  • 1kg chat (small coliban) potatoes
  • Freshly ground black pepper
Instructions:
  • Preheat your oven to 180°C. Combine salt, sage, thyme, and rosemary in a mortar and crush with a pestle until finely ground. Alternatively, you can use a plastic or metal bowl and crush the mixture with the end of a rolling pin.
  • In a large roasting pan, generously coat the potatoes with oil and sprinkle the salt mixture, toss until potatoes are fully coated, then season with pepper.
  • Roast in a preheated oven until golden brown and tender, about 1 hour. Remove from the oven.
  • Serve the beef wellingtons in a large serving bowl.
