Roasted chat potato and herb salad

Elevate traditional potato salad with fresh herbs and Parmesan for a modern and healthier twist.
Ingredients:
  • 600g chat potatoes, halved
  • 27.30 gm olive oil
  • 20.00 ml red wine vinegar
  • 3 green onions, thinly sliced
  • 125.00 ml fresh mint leaves, roughly chopped
  • 125.00 ml fresh flat-leaf parsley leaves
  • 62.50 ml shaved parmesan cheese (or vegetarian hard cheese)
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Combine potato, 1 tablespoon of oil, salt, and pepper in a bowl. Spread the mixture on a baking tray and roast for 25 to 30 minutes until golden and tender, flipping the potato halfway through cooking.
  • Combine vinegar and remaining oil in a screw-top jar. Secure the lid tightly and shake well.
  • In a bowl, mix together potato, vinegar mixture, onion, mint, and parsley. Sprinkle with Parmesan before serving.
