Roasted potatoes with haloumi and rosemary

Savor slow-roasted chat potatoes to enhance their rich flavors in this delightful side dish.
Ingredients:
  • 1kg chat potatoes, halved
  • 1 bulb garlic, halved crossways
  • 20.00 ml fresh rosemary leaves
  • 250g haloumi, cut into 1.5cm cubes
  • 60g baby rocket
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Spread potatoes, garlic, and rosemary in a large roasting pan. Drizzle with oil, then mix well to ensure everything is coated. Season generously with salt and pepper.
  • Roast for 50 minutes until potatoes are golden and tender. Then add haloumi to the pan, and roast for an additional 10 minutes until the haloumi is just golden and starting to melt.
  • Remove the garlic from the pan and add the rocket. Gently toss together and then serve.
