Garlic herb roasted potatoes and tomatoes in olive oil, perfect for picnics or as a delicious side dish.
Ingredients:
  • 2 pounds red potatoes, chopped
  • 1.5 cups chopped fresh tomatoes
  • 0.75 cup fresh basil, chopped
  • 3 cloves garlic, pressed
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon chopped fresh rosemary
Instructions:
  • Preheat your oven to 400°F (200°C) to get it nice and hot for your recipe.
  • Coat potatoes, tomatoes, basil, and garlic in olive oil in the baking dish. Sprinkle with rosemary before baking.
  • Roast in the oven, flipping occasionally, until tender, for 20 to 30 minutes.
