Spanish-style roasted potatoes with spicy tomato sauce - a healthier twist on traditional patatas bravas.
Ingredients:
  • 600g large chat potatoes
  • 70ml olive oil, plus extra, to drizzle
  • 2 cloves garlic
  • 2.50 gm smoked paprika
  • 1/2 tsp chilli flakes
  • 400g can Italian chopped tomatoes
  • 20.00 ml sherry vinegar (see note)
  • 1.13 gm white sugar
  • 80g soft goat's cheese
  • 500g minced lamb
  • 4 rolls
  • Mayonnaise, to serve
  • Rocket leaves, to serve
Instructions:
  • Preheat your oven to 220C fan-forced. Heat a sturdy ovenproof pan over high heat. Cut each potato into 6 wedges, then pat them dry with paper towel. Add 2 tablespoons of oil to the pan. Once the oil is hot, add the wedges and cook for 5 minutes until they start to sizzle and brown. Season with salt, then transfer to the oven and roast for 20 minutes, turning occasionally.
  • Heat the remaining oil in a saucepan over medium heat. Crush in the garlic, sprinkle in the paprika and chilli, then sauté for 1 minute. Add the tomatoes and vinegar, and bring to a simmer. Let it cook for 10 minutes until slightly thickened. Stir in the sugar and a pinch of salt.
  • Divide the cheese and mince into 4 portions and shape them into balls. Press a cheese ball into the center of each mince ball and flatten into 4 patties measuring 10cm each. Drizzle a little oil on both sides, then rub with your hands to coat evenly. Heat a non-stick frying pan over medium heat, add the patties, and cook each side for about 3 minutes, or until cooked through. Season with salt.
  • Split the rolls and arrange them on a baking tray, cut-side up. Bake in the oven for 6 minutes.
  • Spread a dollop of mayonnaise on each roll, add a patty and a handful of rocket leaves. Combine the potatoes with the tomato sauce, and serve alongside the burgers.
