Lamb burgers with chickpea salad & chilli lime mayonnaise

Lamb burger topped with zesty chickpea salad.
Ingredients:
  • 1 small onion, finely diced
  • 2 garlic cloves, finely diced
  • 500g lamb mince
  • Sea salt & freshly ground pepper
  • 20.00 ml plain flour
  • 36.80 gm vegetable oil, for cooking
  • 79.20 gm lime and chilli mayonnaise
  • 400g can chickpeas
  • 1 red onion, finely sliced
  • 1 punnet grape tomatoes or baby tomatoes, halved
  • 1 bunch parsley, leaves picked, washed, roughly chopped
  • 72.80 gm extra virgin olive oil
  • 1 lemon, juiced
Instructions:
  • Sauté the onion and garlic until tender and aromatic. Let them cool.
  • Mix the onion mixture, mince, cumin, and egg in a bowl. Season with salt and pepper, then add the flour. Shape the mixture into patties using your damp hands. Chill on a tray in the fridge for 30 minutes.
  • After washing and drying the chickpeas, combine them in a bowl with onion, tomatoes, parsley, olive oil, and lemon juice. Season the salad with salt and pepper, then set it aside.
  • - Heat vegetable oil in a frying pan over medium heat. Cook the burgers for 4-5 minutes (less for a pink center) until crispy golden brown. Plate the burgers and serve with chickpea salad and a dollop of lamb and chili mayonnaise.
