Elevate lamb burgers with zesty Middle-Eastern relish.
Ingredients:
  • 125.00 ml fresh continental parsley leaves
  • 55g (1/3 cup) pitted green olives
  • 20.00 ml salted baby capers, rinsed, drained
  • 1 tsp finely grated lemon rind
  • 21.00 gm fresh lemon juice
  • 27.30 gm olive oil
  • 4 (about 100g each) lamb leg steaks
  • 50g baby rocket leaves
  • 4 wholegrain rolls, halved, toasted
  • 200g roasted or chargrilled red capsicum, cut into thick strips
Instructions:
  • Finely chop parsley, olives, capers, and lemon rind in a food processor. Add lemon juice and 1 tablespoon oil, then process until well combined. Season with pepper to taste.
  • In a large non-stick frying pan, heat the remaining oil over high heat. Sear the lamb for 2-3 minutes on each side for a medium cook or to your desired doneness. Place on a plate, cover with foil, and let it rest for 2 minutes before serving.
  • Distribute the arugula evenly among the bottom halves of the rolls. Layer with lamb, bell pepper, a spoonful of the olive mixture, and cover with the top halves of the rolls.
