Delicious lamb burgers in pita with salad, mint, and yogurt.
Ingredients:
  • 36.40 gm olive oil, plus extra for frying
  • 21.00 gm lemon juice
  • 250.00 ml mint leaves
  • 500g lamb mince
  • 80.00 ml ready-made olive tapenade
  • 200g feta, cut into 8 thin slices
  • 2 vine-ripened tomatoes, sliced
  • 100g rocket
  • 1/2 telegraph cucumber, cut into wedges
  • 4 rounds pita bread, warmed
  • Thick yoghurt, to serve
Instructions:
  • Combine the oil and lemon juice to create a flavorful dressing, season to taste, and let it rest.
  • Combine half of the chopped mint with the lamb and tapenade in a bowl. Avoid adding additional salt since tapenade is flavorful. Shape the mixture into 8 small burgers.
  • In a hot frypan, sear the burgers for 2-3 minutes on each side, adding more oil as needed. Top each with feta, tomato, and a mint leaf. Secure with a toothpick if desired.
  • Combine the rocket, cucumber, and remaining mint in a bowl with half of the dressing. Serve by placing warm pita on each plate, topping with a burger stack, and serving the salad on the side.
  • Drizzle the remaining dressing over the dish and top with a dollop of yogurt. Season with cracked black pepper to taste.
