Juicy ground lamb and beef burgers grilled to perfection, topped with green tomatoes, sweet onions, tangy feta cheese, and creamy tzatziki sauce.
Ingredients:
  • 1 pound ground lamb
  • 0.5 pound ground beef
  • 3 tablespoons chopped fresh mint
  • 1 teaspoon minced fresh ginger root
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 (16 ounce) container Greek yogurt
  • 0.5 lemon, zested
  • 1 clove garlic, minced
  • 0.5 teaspoon salt
  • 1 large sweet onion, cut into 1/2-inch slices
  • 4 slices green tomato
  • 4 ciabatta sandwich rolls, sliced horizontally
  • 1 (8 ounce) package feta cheese, sliced
  • 8 baby arugula leaves
Instructions:
  • Preheat the outdoor grill to medium-high heat and lightly oil the grate.
  • Prepare the patties: Combine ground lamb, ground beef, fresh mint, ginger, garlic, salt, and pepper in a large bowl, mixing until just incorporated. Divide the mixture into four equal parts and form them into large patties. Set aside for later use.
  • Prepare the delicious sauce by combining Greek yogurt, lemon zest, garlic, and salt in a bowl, then cover and chill in the refrigerator.
  • Grill burger patties to your preferred doneness, about 3 to 4 minutes per side for well done, until an instant-read thermometer reads 160°F (70°C) when inserted into the center.
  • While the burgers cook, prepare for assembly by grilling slices of onion and green tomato until lightly charred, about 1 minute per side.
  • Spread creamy yogurt sauce on ciabatta slices, top with burger patties, feta cheese, grilled tomato, onion, arugula, then add the top halves of the rolls to assemble the burgers.
