Mediterranean lamb wraps recipe

Ingredients:
  • 500g Lamb Backstrap
  • 2 x 350g pkts Mediterranean Style Vegetable Grill Mix
  • 150g Smokey Baba Ganoush dip
  • 4 Helga’s Wholemeal Wraps
  • 60g pkt baby rocket leaves
Instructions:
  • Preheat a barbecue grill or chargrill on high heat. Massage half of the oil onto the lamb and season with pepper. Grill for 3 minutes on each side or until desired doneness. Place on a plate, cover with foil, and let it rest for 5 minutes before thinly slicing.
  • Place the vegetables in a bowl and drizzle with the remaining oil, ensuring they are evenly coated. Grill the vegetables, turning occasionally, for 2-3 minutes or until they are charred and heated through.
  • Spread the dip on the wraps, then layer with rocket, vegetables, and lamb. Add a sprinkle of pepper, and roll up to seal all the delicious flavors inside.
