Ingredients:
  • 2 small zucchini, chopped
  • 1 yellow capsicum, thickly sliced
  • 1 medium red capsicum, thickly sliced
  • 1 medium red onion, cut into wedges
  • 2 baby eggplant, quartered
  • 100g Swiss brown mushrooms, halved
  • 40.00 gm rocket pesto
  • 8 lamb loin chops, trimmed
  • Rocket pesto, to serve
  • Baby rocket, to serve
Instructions:
  • Preheat your oven to a toasty 220°C (200°C fan-forced). Arrange zucchini, capsicum, onion, eggplant, mushroom, pesto, and oil in a generous baking dish. Season with a pinch of salt and pepper. Mix everything gently to coat evenly.
  • Spread the lamb over the bed of vegetables in the baking dish. Roast in the oven, flipping the lamb halfway, for 18 to 20 minutes for medium or until desired doneness. Enjoy with a side of pesto and fresh rocket leaves.
