Ingredients:
  • 600g gold sweet potato, peeled, cut into wedges
  • 500g Graze Lamb Mince
  • 1 lemon, rind finely grated, quartered
  • 1 tsp finely chopped rosemary
  • 1 red capsicum, seeded, chopped
  • 1 large red onion, cut into wedges
  • 1 fennel, thinly sliced, fronds reserved
  • 100g fetta, crumbled
  • 45g olive
  • 20g baby spinach leaves
Instructions:
  • Preheat the oven to 200°C. Line a large roasting pan with baking paper. Place the sweet potato on the tray and coat with olive oil spray. Bake for 10 minutes.
  • In a medium bowl, mix together the mince, garlic, lemon rind, and rosemary. Season with salt and pepper. Shape the mixture into 1-tbs sized balls.
  • Combine the capsicum, onion, fennel, meatballs, and lemon wedges with the sweet potato in the pan. Drizzle with olive oil spray. Roast for 25 minutes or until the meatballs are fully cooked and the veggies are golden and tender.
  • Top the meatball mixture with crumbled feta, olives, spinach, and the fennel fronds you set aside earlier.
