Delicious meatballs, a family favorite!
Ingredients:
  • 600g lamb mince
  • 250.00 ml fresh breadcrumbs
  • 1 garlic clove, crushed
  • 40.00 ml oregano leaves, chopped
  • 100g feta cheese, crumbled
  • olive oil cooking spray
  • Pita bread, to serve
  • Tzatziki dip, to serve
  • Salad
  • 250g punnet cherry tomatoes, halved
  • 1 Lebanese cucumber, cut into thin sticks
  • 62.50 ml mint leaves, shredded
  • 1 small lemon, juiced
Instructions:
  • Preheat your oven to 200°C and prepare a large baking tray with non-stick baking paper.
  • Mix mince, breadcrumbs, garlic, egg, oregano, feta, salt, and pepper thoroughly to combine. Shape into balls and place on a tray. Spray lightly with oil. Bake for 15 minutes or until cooked through.
  • Prepare a refreshing salad by mixing together ripe tomatoes, crisp cucumber, and fragrant mint leaves. Emulsify a dressing by whisking olive oil, freshly squeezed lemon juice, and a pinch of salt and pepper. Drizzle the dressing over the salad for a burst of flavor. Enjoy the salad alongside juicy meatballs, crusty bread, and a delicious dip.
