Quick and flavorful Mediterranean lamb tray bake, ready in just 20 minutes, perfect for cozy evenings.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 8 lamb loin chops, trimmed
  • 300g sebago potatoes, thinly sliced
  • 1 red onion, halved, cut into wedges
  • 20.00 ml fresh lemon thyme leaves
  • 63.75 gm chicken style liquid stock
  • 1 small red capsicum, thickly sliced
  • 1 small yellow capsicum, thickly sliced
  • 1 small lemon, cut into wedges
  • 2 garlic cloves, thinly sliced
  • 250g cherry truss tomatoes, cut into small bunches
  • 82.50 ml pitted kalamata olives
  • 100g fetta, crumbled
  • Thyme sprigs, to serve
Instructions:
  • Preheat your oven to a toasty 220C/200C fan-forced.
  • Preheat a large ovenproof baking tray with oil on high heat. Sear lamb for 2 minutes on each side until nicely browned. Set aside on a plate and cover with foil to keep warm. Toss potato, onion, thyme, and stock in the tray. Place in the oven and bake for 15 minutes until onion is nearly tender.
  • Toss capsicum, lemon wedges, and garlic together. Season with salt and pepper, then top with tomatoes. Bake for 15 minutes until vegetables soften. Place the chops on top and sprinkle with olives and feta. Bake for an additional 10 to 15 minutes until lamb is cooked through and veggies are tender and slightly charred. Finish with a sprinkle of extra thyme before serving. Enjoy!
