Delight in a Mediterranean-inspired family tray bake.
Ingredients:
  • 60ml (1/4 cup) olive oil
  • 4.00 garlic cloves, crushed
  • 1 1/2 tsp dried oregano leaves
  • 1 lemon, rind finely grated, juiced, plus extra wedges, to serve
  • 800g desiree potatoes, unpeeled, cut into wedges
  • 2 red onions, cut into wedges
  • 2 red capsicums, deseeded, cut into wedges
  • 1 large eggplant (about 500g), cut into wedges
  • 250g cherry truss tomatoes
  • Fresh mint sprigs, to serve
  • Greek-style yoghurt, to serve
  • 500g lamb mince
  • 40g panko breadcrumbs
  • 3.75 gm ground cumin
  • 1 egg, lightly whisked
Instructions:
  • Preheat your oven to a toasty 220°C (200°C for fan ovens). Grease a generously sized 35 x 45cm baking dish and line it with baking paper for easy clean-up.
  • In a large bowl, combine oil, garlic, oregano, lemon rind, and 2 tablespoons of lemon juice. Add potato, onion, capsicum, and eggplant. Season and toss well to coat. Spread the mixture over a prepared dish and roast for 15 minutes.
  • For the spiced Greek meatballs, combine all ingredients in a bowl, season, and mix well using damp hands. Divide the mixture into 12 portions and shape each into a ball.
  • Combine the meatballs and tomatoes in the dish. Roast for 20 minutes, or until both are golden. Finish with a sprinkle of fresh mint and a dollop of yogurt. Season to taste and serve with extra lemon wedges on the side.
