Greek-inspired lamb meatballs with fresh herbs and zesty lemon sauce, ready in under 1 hour.
Ingredients:
  • 0.33333334326744 cup milk
  • 1 egg
  • 0.33333334326744 cup dry bread crumbs
  • 0.33333334326744 cup snipped fresh mint
  • 0.33333334326744 cup snipped fresh parsley
  • 0.25 cup finely chopped onion
  • 2 tablespoons chopped fresh dill
  • 0.75 teaspoon salt
  • 1 pinch ground black pepper to taste
  • 1 pound ground lamb
  • 2 tablespoons vegetable oil, or as needed
  • 2 tablespoons all-purpose flour
  • 0.25 teaspoon salt
  • 1 dash ground black pepper
  • 1 cup milk
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
Instructions:
  • In a large bowl, whisk together the milk and egg. Stir in bread crumbs, mint, parsley, onion, dill, garlic, salt, and pepper. Mix in the ground lamb until well combined. Form into 1-inch meatballs.
  • In a large skillet over medium heat, heat oil until shimmering. Add meatballs and cook until golden brown on all sides, about 1 to 2 minutes per side. Lower the heat, cover, and continue cooking until meatballs are cooked through, about 15 to 20 minutes.
  • Melt butter in a saucepan, then whisk in flour, salt, and pepper. Pour in milk and cook until thick and bubbly, around 5 minutes. Let simmer for an additional 2 minutes. Finish by stirring in lemon juice and zest.
  • Place the meatballs in a colander to drain excess liquid, then elegantly arrange them on a serving dish. Generously spoon the zesty lemon sauce over the top for a burst of flavor.
