Tender lamb patties in pita with fresh salad - a delicious and convenient lunch option.
Ingredients:
  • 500g lean lamb mince
  • 50g breadcrumbs
  • 5.00 gm Moroccan spice mix (see note)
  • 2 garlic cloves, crushed
  • 1 egg, beaten
  • 18.20 gm extra virgin olive oil
  • 4 pita bread pockets, warmed, split
  • 2 tomatoes, sliced
  • 500.00 ml wild rocket leaves
  • 200g low-fat tzatziki (see note)
Instructions:
  • Mix together the lamb, breadcrumbs, Moroccan spice mix, garlic, egg, salt, and pepper in a bowl. Shape the mixture into twelve 5cm patties.
  • 1. Heat oil in a pan over medium-low heat. Cook patties in batches for 3 minutes on each side until golden brown and fully cooked. Fill pita pockets with patties, tomato, rocket, and a hearty dollop of tzatziki. Top with extra tzatziki before serving.
