Stuffed pita pockets with flavorful lamb patties, fresh veggies, and dip - a simple, speedy, and tasty meal!
Ingredients:
  • 400g lamb mince
  • 50g Danish feta, crumbled
  • 1 slice bread, crusts removed, torn
  • 1 shallot, ends trimmed, thinly sliced
  • 18.20 gm peanut oil
  • 4 rounds pita bread
  • 1/2 telegraph cucumber, peeled lengthways into ribbons
  • 1 carrot, peeled lengthways into ribbons
  • 125g bought reduced-fat tzatziki
Instructions:
  • Heat up the barbecue flat plate or a large frying pan over medium heat. Combine lamb, feta, bread, shallot, and egg yolk in a bowl. Season with salt and pepper, then mix until fully incorporated. Divide the mixture into 12 equal parts and shape them into patties.
  • Brush oil on each patty, then cook on a flat plate for 3 minutes on each side until golden and cooked through. Transfer to a plate and cover with foil to keep warm.
  • Place the pita bread on the flat plate and heat for 30 seconds on each side until warmed. Slice one end of each bread to create a pocket.
  • Arrange the pita bread on serving plates. Stuff each pocket with 3 patties, cucumber, and carrot. Garnish with a generous dollop of tzatziki and serve the extra on the side.
