Stay in and enjoy homemade lamb and feta pide for a tasty treat!
Ingredients:
  • 9.20 gm olive oil
  • 1 brown onion, halved, finely chopped
  • 500g lamb mince
  • 20.00 gm chermoula seasoning
  • 1 x 150g pkt baby spinach leaves
  • 45g (1/4 cup) toasted pine nuts
  • 40.00 ml currants
  • Salt & freshly ground black pepper
  • 1 x 450g loaf Turkish bread
  • 100g feta, crumbled
  • 125.00 ml loosely packed fresh continental parsley leaves
  • 200g tzatziki
Instructions:
  • 1. Preheat the oven to 200C and heat oil in a large frying pan over medium-high heat. Saute onion until golden, about 5 minutes. Stir in lamb mince and cook for 5 minutes until it changes color, breaking up lumps with a wooden spoon. 2. Mix in chermoula, cook for 1 minute until aromatic. Add spinach and cook for 2 minutes until wilted. 3. Take off the heat and stir in pine nuts and currants. Season with salt and pepper to taste before serving.
  • Spread a layer of the mince mixture over the bread on a baking tray, then sprinkle feta on top. Bake in the oven for about 15 minutes until heated through.
  • Garnish the pide generously with fresh parsley, slice it, and arrange beautifully on a platter. Serve promptly with a side of creamy tzatziki sauce.
