Succulent lamb patties paired with a flavorful chickpea salad make for a delicious and easy weeknight dinner.
Ingredients:
  • 500g lamb mince
  • 1 small brown onion, finely chopped
  • 1 egg, lightly beaten
  • 22.60 gm barbecue sauce
  • 12.00 gm sesame seeds
  • 187.50 ml dried breadcrumbs
  • 36.40 gm olive oil
  • 400g can chickpeas, drained, rinsed,
  • 40g baby rocket
  • 82.50 ml fresh mint leaves
  • 1/2 small red onion, thinly sliced
  • 1 small carrot, peeled, grated
  • 41.20 gm French dressing
Instructions:
  • Mix together ground beef, chopped onion, egg, tangy barbecue sauce, nutty sesame seeds, and breadcrumbs in a bowl. Form the flavorful mixture into 8 juicy patties and arrange them on a baking tray lined with parchment paper.
  • In a large frying pan, heat oil over medium-high heat. Cook patties in batches for 3 to 4 minutes on each side until they are cooked through.
  • In a large bowl, mix together chickpeas, arugula, fresh mint, onion, and carrot. Drizzle with dressing and gently toss until everything is well combined. Serve and enjoy!
