Honey sesame lamb cutlets

Indulge in succulent sticky lamb cutlets paired with a crisp, fresh vegetable medley.
Ingredients:
  • 89.38 gm honey
  • 62.50 ml tamari
  • 20.00 ml sriracha chilli sauce, plus extra to serve
  • 1 garlic clove, crushed
  • 2 tsp sesame oil
  • 3.00 gm sesame seeds
  • 18.40 gm vegetable oil
  • 12 lamb cutlets, French trimmed
  • 20.00 ml rice wine vinegar
  • 2 baby gem lettuce, cut into wedges
  • 2 Lebanese cucumbers, halved lengthways, thinly sliced diagonally
  • 2 carrots, halved lengthways, thinly sliced diagonally
  • 250.00 ml shredded red cabbage
  • 2 spring onions, thinly sliced diagonally
  • 2 long red chillies, thinly sliced diagonally
  • Japanese-style mayonnaise, to serve
Instructions:
  • In a medium bowl, mix together honey, tamari, chili sauce, garlic, sesame oil, and sesame seeds. Let it sit for later use.
  • In a large frying pan over medium-high heat, warm up vegetable oil. Brown lamb on each side for 2 minutes. Pour in 2/3 of the honey mixture. Continue cooking for 2 more minutes until the sauce thickens and the lamb is coated.
  • Combine vinegar with the leftover honey mixture. Arrange lettuce, cucumber, carrot, and cabbage on a serving tray. Drizzle with the honey mixture. Add the lamb on top. Sprinkle with onions and chili. Serve with extra chili sauce and mayonnaise on the side.
