Greek lamb patties with whipped fetta tzatziki

Transform lamb sausages into delicious Greek meatballs for a unique twist on the classic salad.
Ingredients:
  • 500g lamb sausages
  • 2 tsp finely grated lemon rind, plus extra lemon zest, to serve
  • 40.00 ml finely chopped kalamata olives
  • 40.00 ml finely chopped fresh oregano leaves
  • 45.50 gm extra virgin olive oil
  • 1 small baby cos, roughly chopped
  • 200g grape tomatoes, quartered
  • 1 small red onion, thinly sliced
  • 1 green capsicum, diced
  • 150g fetta, crumbed
  • 125.00 ml plain Greek-style yoghurt
  • 1 small garlic clove, roughly chopped
  • 2 tsp finely grated lemon rind
  • 20.00 ml finely chopped fresh mint leaves
  • 1 large Lebanese cucumber, finely diced
Instructions:
  • Combine sausage mince, lemon rind, olives, oregano, and pepper in a bowl. Mix thoroughly, then shape into 12 small patties.
  • To make Whipped Fetta Tzatziki, combine feta, yogurt, garlic, lemon zest, and juice in a small food processor. Blend until smooth, occasionally scraping down the sides. Transfer mixture to a bowl. Mix in mint and half of the cucumber. Season with pepper and stir well to combine. Set aside.
  • In a large frying pan over medium heat, heat 2 teaspoons of oil until shimmering. Add the patties and cook for 4 to 5 minutes on each side, until they are beautifully browned and cooked through.
  • In a large bowl, mix together the lettuce, tomato, onion, capsicum, and any leftover cucumber. Spread whipped feta on the serving plates, then top with the salad and patties. Drizzle with the leftover oil and sprinkle with extra lemon zest before serving. Enjoy!
