Ingredients:
  • 60ml olive oil
  • 31.50 gm lemon juice
  • 1/2 tsp dried mixed herbs
  • salt and cracked black pepper
  • 550g lamb backstraps, trimmed
  • 4 rounds Lebanese bread, warmed
  • store-bought hummus, to serve
  • store-bought tabouli, to serve
Instructions:
  • Combine oil, garlic, lemon juice, mixed herbs, salt, and pepper in a non-metallic bowl. Coat the lamb evenly with the mixture. Refrigerate, covered, for 20 minutes.
  • Preheat a stovetop grill or barbecue hot plate until it's sizzling hot. Drain the lamb from the marinade and grill for 4 minutes on each side, or until it reaches your desired doneness. Let it rest for 5 minutes before serving.
  • Slice the lamb. Spread warm Lebanese bread with hummus, top with tabouli and lamb, fold over to enclose the filling, and serve immediately.
