Whip up a quick and delicious Mediterranean burger for an easy weeknight dinner.
Ingredients:
  • 500g lamb mince
  • 80ml (1/3 cup) spicy tomato relish
  • 4 ciabatta olive rolls, halved, toasted
  • 75g (1/4 cup) hummus
  • 40g baby rocket leaves
  • 100g fire-roasted peppers, drained, sliced
  • 120g Persian feta, crumbled
Instructions:
  • Preheat a barbecue or chargrill to medium-high heat. Mix mince and relish in a bowl, season generously, and form into four 2cm-thick patties.
  • Sear patties for 4 minutes per side, or until perfectly cooked. Allow them to rest for 2 minutes before serving.
  • Spread the roll bases generously with creamy hummus. Layer on fresh peppery rocket, succulent lamb slices, sweet roasted peppers, and tangy crumbled feta. Finally, gently press the roll tops on to create a delicious sandwich.
