Spicy Merguez-style lamb sausage: Mix ground lamb with cumin, coriander, cinnamon, turmeric, garlic, and harissa sauce for burgers, breakfast, or any dish.
Ingredients:
  • 1 teaspoon salt
  • 0.25 teaspoon fennel seeds
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon ground turmeric
  • 3 cloves garlic, peeled
  • 2 tablespoons harissa, or to taste (see Ingredient note)
  • 1 tablespoon tomato paste
  • 1 pound lean ground lamb
  • 1 tablespoon olive oil
Instructions:
  • Grind salt and fennel seeds in a mortar and pestle until fine. Mix in cumin, cinnamon, coriander, turmeric, and garlic to create a thick paste. Add harissa sauce and tomato paste, and blend until smooth.
  • Mix ground lamb and the fragrant spice paste in a large bowl using a fork. Chill in the refrigerator for 8 hours to overnight.
  • Shape the sausage into patties. Sear them in a large skillet with olive oil over medium-high heat until cooked through, about 5 to 8 minutes on each side, adjusting the time according to the size of the patties.
