Grilled lamb burgers with ripe tomatoes, red onion, and cucumber-mint sauce in pita bread.
Ingredients:
  • 4 large unpeeled garlic cloves
  • 1.25 pounds ground lamb
  • 0.5 cup crumbled feta cheese
  • 0.75 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 large cucumber, peeled, grated and squeezed very dry in a clean towel
  • 0.75 cup sour cream
  • 1 tablespoon minced fresh mint leaves
  • 1 teaspoon red or rice wine vinegar
  • salt and pepper to taste
  • 4 small (4 inch) pita breads
  • 4 large, thin red onion slices
  • 4 large, thin tomato slices
Instructions:
  • Prepare patties: In a small skillet over medium-high heat, toast garlic cloves until spotty brown, approximately 5 minutes. Peel, mince, and reserve.
  • In a medium bowl, mix lamb with minced toasted garlic, feta, oregano, salt, and pepper until well combined. Divide the mixture into 4 equal portions and shape each into a ball by tossing gently between cupped hands. Flatten each ball into a patty about 4 inches wide, then chill in the refrigerator.
  • Prepare the refreshing sauce by combining cucumber, sour cream, mint, vinegar, and garlic in a small bowl. Mix well and season with salt and pepper. Chill in the refrigerator until serving time.
  • Grill patties: Preheat one side of the grill until the coals are covered with white ash. Place the patties on the rack, close the lid, and grill for 4 to 5 minutes per side for medium to medium-well burgers. Ensure the internal temperature reaches at least 160°F (72°C). Allow the patties to rest on a plate before serving.
  • Grill pitas until golden and heated through, about 1 minute per side. Split pitas open. Spread 2 tablespoons sauce on 4 pita halves. Layer each with red onion, tomato, and a burger patty. Spread remaining sauce on each burger. Top with remaining pitas.
