Delicious lamb burgers on wholegrain bread with avocado, arugula, and cucumber toppings.
Ingredients:
  • 9.20 gm olive oil
  • 1 medium brown onion, finely diced
  • 2 tsp ground coriander
  • 2.50 gm ground cumin
  • 2.50 gm ground cinnamon
  • 1 large garlic clove, crushed
  • 500g Trim Lamb (round or topside) steaks, roughly chopped
  • 82.50 ml chopped fresh coriander leaves and stems
  • 30g (1/3 cup) dried (packaged) breadcrumbs
  • 80ml (1/3 cup) reduced-fat milk
  • Salt & ground black pepper
  • 4 2.5cm-thick slices square wholegrain bread, toasted
  • 1 bunch rocket, ends trimmed, washed, dried
  • 1 Lebanese cucumber, thinly sliced
  • 1/2 small ripe avocado, peeled, thinly sliced lengthways
Instructions:
  • In a large non-stick pan over medium heat, heat oil. Add onion and cook for 4 minutes until softened, stirring occasionally. Add ground coriander, cumin, cinnamon, and garlic. Cook for 30 seconds until fragrant. Remove from heat.
  • Next, finely mince the lamb by placing it in the bowl of a food processor. Move the minced lamb to a medium bowl and combine with the onion mixture, fresh coriander, breadcrumbs, and milk. Season with salt and pepper, then mix thoroughly. Divide the mixture into 4 parts and shape into square 10cm patties.
  • Preheat a non-stick frying pan over medium heat. Cook the patties for 4 minutes on each side or until they are just cooked through.
  • To assemble, layer the rocket, patties, cucumber, and avocado on the toasted bread. Season with freshly ground pepper and enjoy.
