Spicy harissa roasted potatoes with butter and cilantro - a flavorful and easy side dish with a kick.
Ingredients:
  • 3 large Yukon Gold potatoes, peeled and cubed
  • 2 tablespoons grapeseed oil, divided
  • 1 teaspoon kosher salt, or more to taste
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons harissa paste
  • 2 tablespoons chopped fresh cilantro
  • 1 lemon, zested
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and smoothly line a baking sheet with parchment paper.
  • Wash potatoes in a colander to eliminate extra starch, then allow them to drain.
  • In a large microwave-safe bowl, combine potatoes with 1 tablespoon oil and salt. Toss to coat evenly. Cover and microwave on high for 4 minutes. Give it a stir, cover again, and continue microwaving until potatoes are fork-tender, about 2 minutes more. Drain thoroughly before serving.
  • Spread the potatoes evenly on the baking sheet lined with parchment paper. Drizzle with the remaining oil and toss gently to ensure they are well coated before spreading them out in a single layer.
  • Roast in the preheated oven until golden brown, approximately 20 minutes. Stir well and roast for an additional 5 minutes until evenly browned.
  • In a bowl, mix butter, harissa, cilantro, and lemon zest. Mash with a fork, season with salt if necessary. Add potatoes and coat with the harissa butter. Serve promptly.
