Herb roasted salmon and golden beets

Indulge in succulent roasted salmon for a boost of omega-3s!
Ingredients:
  • 2 bunches Golden Beets, trimmed, scrubbed, very thinly sliced lengthwise
  • 91.00 gm extra-virgin olive oil
  • 4 skinless salmon fillets (about 180g each)
  • 20.00 ml fresh chives, finely chopped
  • 20.00 ml fresh parsley, finely chopped
  • 20.00 ml fresh tarragon, finely chopped
  • 60.00 ml finely chopped shallots (about 2 medium)
  • 20.00 ml fine lemon zest
  • 65.63 gm fresh lemon juice
Instructions:
  • Preheat the oven to 235C (215C fan-forced) to create the perfect cooking environment.
  • Spread the beets on a baking tray, drizzle with 1 1/2 tablespoons of olive oil, season with salt and pepper, then roast in the center of the oven for around 20 minutes until crisp-tender.
  • Lay the salmon over the beets. Brush it with 1/2 tablespoon of oil, season with salt and pepper. In a bowl, combine chives, parsley, and tarragon. Sprinkle most of the herb mixture over the salmon. Roast until salmon is slightly pink in the center, about 15 minutes.
  • In a bowl with the mixed herbs, whisk in 3 tablespoons of oil, shallots, lemon zest, and juice. Season the dressing with salt and pepper to taste. Drizzle the dressing over the salmon and beets before serving.
