Try this flavor-packed stuffed pork loin for a delicious Sunday dinner. Roasted pork filled with savory bread, celery, mushroom, and herb stuffing.
Ingredients:
  • 3 tablespoons margarine
  • 0.5 cup chopped onion
  • 0.5 cup chopped mushrooms
  • 2 stalks celery, chopped
  • 3 cups torn day-old bread
  • 1 (4 pound) boneless pork loin roast
  • 1 tablespoon ground thyme
  • 1 tablespoon herbes de Provence
  • 0.25 teaspoon garlic powder, or to taste
Instructions:
  • Get all your ingredients ready while you preheat the oven to 300 degrees F (150 degrees C).
  • Create the stuffing by melting margarine in a skillet over medium heat. Sauté onion, mushrooms, and celery until tender, approximately 12 minutes.
  • Combine the vegetables with bread in a bowl. Mix until bread is moistened, then season generously with salt and pepper.
  • Prepare the pork loin by slicing it in half lengthwise, leaving the bottom inch intact, allowing you to open it up like a book.
  • Cover the ingredient with plastic wrap and gently pound it with a meat mallet to flatten, then remove and discard the plastic wrap.
  • Spread the stuffing evenly over the flattened pork loin.
  • Wrap meat around the delicious stuffing and tie it securely in three spots with kitchen twine.
  • Put the tied loin in a roasting pan and season it with thyme, herbes de Provence, garlic powder, salt, and pepper. Add approximately 3 tablespoons of water around the roast in the pan.
  • Roast in the preheated oven until the stuffing reaches 160°F (70°C), about 2 1/2 to 3 hours. Allow it to rest for 15 minutes before untying and slicing.
