Smoky pork loin with spicy sausage and jalapeno swirl.
Ingredients:
  • 0.5 pound spicy bulk breakfast sausage
  • 1 (2 pound) boneless pork loin roast
  • 2 tablespoons finely chopped pimientos
  • 1 (8 ounce) package cream cheese, softened
  • 2 medium jalapeno peppers, seeded and diced
  • cooking twine
Instructions:
  • In a heated skillet, cook and stir sausage until browned and crumbly, 5 to 7 minutes. Remove and discard grease.
  • Preheat the smoker as directed by the manufacturer until it reaches a consistent 220°F (104°C).
  • Prepare the pork loin by removing the silver skin and fat, then carefully slice it open and flatten it out. Season both sides generously with the pork rub. Next, spread cream cheese over one side and layer jalapenos and cooked sausage evenly on top. Roll the loin into a tight log and secure with cooking twine.
  • Smoke the loin in the preheated smoker until an instant-read thermometer inserted into the center reads 140 to 145 degrees F (60 to 63 degrees C), for approximately 2 hours. Remove the loin and wrap it tightly in aluminum foil. Allow it to rest for at least 20 minutes before serving.
