Apple-Stuffed Pork Loin

Succulent pork loin rolled with savory apple stuffing, perfect for any occasion.
Ingredients:
  • 1 (1 1/2-pound) boneless pork loin
  • 9 cups chopped apples
  • 9 slices bread, diced
  • 1 cup chicken stock
  • 2 tablespoons poultry seasoning
  • 2 tablespoons seasoned salt
  • 2 eggs, beaten
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and set up a wire rack on a baking sheet.
  • Lay the pork on a work surface and slice into 1/2-inch thick pieces, starting from the edge of the cutting board. Roll out the pork until the entire loin is flattened on the work surface. Cover the loin with plastic wrap and use a meat mallet to pound it into 1/4-inch thickness.
  • Combine apples, bread, chicken stock, poultry seasoning, seasoned salt, and eggs in a bowl. Spread the mixture onto the pork loin. Roll the loin around the apple filling with the fat cap on top. Cut the stuffed pork loin in half and place it on a rack.
  • Roast in the preheated oven until pork is fully cooked, about 1 hour, reaching an internal temperature of at least 145°F (63°C) when tested with an instant-read thermometer.
