Elevate your pork loin with a flavorful stuffing of apples, pecans, and cranberries.
Ingredients:
  • 1 cup chicken flavored dry stuffing mix
  • 0.5 cup water
  • 1 (3 pound) boneless pork loin roast
  • 1 cup chopped apple
  • 0.33333334326744 cup dried cranberries
  • 0.33333334326744 cup chopped toasted pecans
  • 0.25 cup finely chopped onion
  • salt and black pepper to taste
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C). In a mixing bowl, combine the stuffing mix with water and set it aside. Grease a roasting pan with cooking spray.
  • Remove the fat and connective tissue from the pork loin. Slice horizontally through the middle to within 1/2-inch of the other side, then open the two sides like a book. Place the pork loin between two sheets of heavy plastic or resealable freezer bags on a solid surface. Pound the pork with a meat mallet to a thickness of 1/2-inch.
  • Combine the apples, cranberries, pecans, and onion with the stuffing mix. Season the pork loin with salt and pepper, then spread the stuffing mixture on the cut side of the loin. Roll pork into a cylinder, tie securely with twine, and place in the roasting pan.
  • Roast the pork in the preheated oven until it's cooked through, about 1 hour, reaching an internal temperature of 145 degrees F (63 degrees C) when measured with an instant-read thermometer. Let it rest covered with two layers of foil in a warm spot for 10 minutes. Remove the kitchen twine before slicing and serving.
