Apple-cranberry stuffed pork chops glazed with apple reduction. Pair with potatoes or green beans.
Ingredients:
  • 0.125 yellow onion, minced
  • 1 Granny Smith apple - peeled, cored and diced
  • 2 stalks celery ribs, finely chopped
  • 0.25 cup dried cranberries
  • 5 (1 inch thick) boneless pork chops
  • 1 cup apple juice
  • 1 tablespoon cornstarch
  • 1 teaspoon freshly ground black pepper
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Melt 1 tablespoon of butter in a Dutch oven over medium heat. Cook the onion until very soft and starting to brown. Take the pot off the heat, then mix in apple, celery, and dried cranberries. Season with salt.
  • Place the chop flat on a cutting board. Using a sharp knife parallel to the board, make a pocket in each chop while leaving three sides intact. Fill each chop with the apple-cranberry mixture.
  • Melt the remaining butter in a Dutch oven over medium heat. Pan-fry the chops in the butter for 2 minutes on each side. Remove from heat.
  • Cover the Dutch oven and let the oven work its magic for 45 minutes.
  • Place the chops on a plate and cover with foil. Return the Dutch oven to the stovetop over medium heat. In a small bowl, mix apple juice, cornstarch, and brown sugar. Pour the mixture into the Dutch oven and cook until the liquid is reduced by half, stirring often. Season with black pepper and serve the apple glaze over the pork chops.
