Caramelised Pork Pasta Salad recipe

Savory summer salad with sweet pork, chickpeas, and spelt pasta for a satisfying meal.
Ingredients:
  • 250g spiral spelt pasta
  • 56.88 gm olive oil
  • 500g pork mince
  • 1 tsp dried oregano
  • 4 garlic cloves, crushed
  • 28.60 gm honey
  • 65.63 gm lemon juice
  • 400g can chickpeas, rinsed, drained
  • 1 continental cucumber, sliced
  • 250g cherry tomatoes, halved
  • 125.00 ml chopped fresh flat-leaf parsley
  • 82.50 ml small fresh basil leaves
  • 3 green onions, thinly sliced
Instructions:
  • Boil the pasta in a large saucepan of salted water according to package instructions until tender. Drain the pasta and rinse with cold water.
  • In a large frying pan over high heat, heat 1 tablespoon of oil. Add the minced meat and cook for 5-7 minutes until browned, breaking it up with a wooden spoon. Sprinkle in the oregano, garlic, and sugar. Let it cook for 2 minutes until golden without stirring.
  • In a large bowl, whisk together honey, lemon, and the remaining oil. Add in the cooked pasta, pork, and remaining ingredients. Season with salt and pepper, then toss everything together until well combined. Serve and enjoy!
