Quick and easy creamy pulled pork pasta made with flavorful leftover pulled pork. Ready in just 30 minutes for a delicious and impressive meal.
Ingredients:
  • 1 lb uncooked campanelle pasta
  • 2 tablespoons butter
  • 1 cup thinly sliced onion
  • 1/2 teaspoon salt
  • 1 package (8 oz) sliced mushrooms
  • 1/4 cup sherry vinegar, plus more for drizzling
  • 1 cup heavy whipping cream
  • 2 cups oven-roasted pulled pork
  • 1 package (5 oz) baby arugula
  • 1/2 cup shredded Parmesan cheese (2 oz)
Instructions:
  • Prepare pasta according to package instructions in a pot of salted water. Set aside 1/4 cup of the cooking liquid. Drain pasta well and return it to the pot.
  • In a 10-inch skillet over medium heat, melt butter until sizzling. Sauté onions with a pinch of salt until caramelized. Introduce mushrooms and cook until they release and reabsorb their juices. Deglaze the pan with vinegar, then add pork and cream. Simmer until the sauce thickens, and then it's ready to serve.
  • Combine the savory pork mixture with the pasta in the pan and mix thoroughly. Gently incorporate the arugula and stir until it wilts slightly. Serve the delightful dish in 8 bowls and sprinkle each with cheese. For an extra burst of flavor, drizzle with a bit more vinegar.
