Cinnamon-Maple Glazed Salmon Salad

Try this delicious 35-minute salmon salad with feta, cherries, and pecans for a refreshing and satisfying meal.
Ingredients:
  • 1/3 cup real maple or maple-flavored syrup
  • 1/3 cup canola or vegetable oil
  • 2 tablespoons plus 1 teaspoon balsamic vinegar
  • 1/2 teaspoon ground cinnamon
  • 1 salmon fillet (1 1/4 lb), cut into 4 pieces
  • 6 cups spring greens (from 5-oz bag)
  • 1/3 cup coarsely chopped pecans, toasted
  • 2/3 cup crumbled feta cheese (2 2/3 oz)
  • 1/3 cup dried cherries
Instructions:
  • Preheat the oven to 400°F and line a 15x10-inch pan with foil. In a small bowl, whisk together the dressing ingredients until blended. Transfer 3 tablespoons of the dressing to a separate small bowl for brushing onto the salmon later. Place the salmon pieces skin side down in the pan, and set aside the remaining dressing for the salad.
  • Bake the salmon for 10 to 14 minutes, brushing with 3 tablespoons of reserved dressing twice during the last 5 minutes of baking, until the salmon flakes easily with a fork. Discard any unused dressing.
  • Toss greens in a large bowl with the reserved dressing. Divide greens, pecans, cheese, and cherries equally onto 4 plates. Gently lift salmon off the skin using a metal spatula and place a piece on top of each salad.
