Maple glazed banana-nut scones with cinnamon warmth.
Ingredients:
  • 2 medium bananas
  • 0.5 cup brown sugar
  • 0.25 cup Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 teaspoons ground cinnamon
  • 2.5 teaspoons baking powder
  • 2.5 cups all-purpose flour
  • 5 tablespoons unsalted butter, chilled
  • 1 cup chopped walnuts, or more to taste
  • 0.33333334326744 cup maple syrup
  • 2 tablespoons unsalted butter
  • 1 cup confectioners' sugar, sifted
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and grease a cookie sheet.
  • In a large bowl, use an electric mixer to mash the bananas until smooth. Add brown sugar, yogurt, egg, and vanilla, mixing until well combined. Stir in cinnamon, baking powder, and salt. Gradually add flour, 1 cup at a time, mixing until just combined after each addition. Avoid overmixing.
  • Grate cold butter into batter with a cheese grater, mix well. Gently incorporate walnuts with a rubber spatula. Spoon batter by heaping 1/4 cupfuls onto the lined cookie sheet.
  • Bake in the preheated oven for 17 to 20 minutes, or until the edges and tops of the scones are golden and a toothpick inserted in the center comes out with only crumbs.
  • As the scones near the end of baking, gently warm maple syrup and butter in a saucepan over medium heat until the butter fully melts (avoid boiling). Take off the heat and gradually whisk in confectioners' sugar until the glaze thickness is just right.
  • Drizzle the glaze over the scones using a spoon or whisk.
