Traditional family recipe for banana nut cake.
Ingredients:
  • 2 eggs
  • 1 teaspoon baking soda
  • 4 tablespoons buttermilk
  • 0.5 cup butter
  • 1.5 cups white sugar
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 3 ripe bananas, mashed
  • 1 cup chopped pecans
  • 3 tablespoons butter, softened
  • 2 cups confectioners' sugar
  • 3 tablespoons heavy whipping cream
  • 0.25 cup pecan halves, or to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while generously greasing and flouring two 9-inch round cake pans.
  • Separate the eggs, then let them rest.
  • Combine baking soda and buttermilk. Cream half a cup of butter or margarine with white sugar. Mix in egg yolks and vanilla until well combined. Gradually add flour and mashed bananas, alternating between the two. Finally, fold in the buttermilk mixture.
  • Whip the egg whites until they form stiff peaks. Combine pecans with the cake batter, then gently fold in the whipped egg whites. Transfer the batter into the prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes or until cakes are done. Allow cakes to cool in pans.
  • Prepare the icing by combining 3 tablespoons of butter or margarine with confectioners' sugar. Blend in the heavy cream until smooth. Spread the icing onto the cooled cake layers and garnish with pecan halves, if desired.
