Banana Nut Coffee Cake

Passover celebration cake with matzo meal.
Ingredients:
  • 6 tablespoons matzo cake meal*
  • 2 tablespoons potato starch
  • 1/4 teaspoon ground nutmeg
  • 3 egg whites
  • 1/2 cup sugar
  • 2 egg yolks
  • 1/2 cup mashed ripe bananas (about 1 1/2 small)
  • 2 tablespoons vegetable oil
  • 4 teaspoons grated lemon peel
  • 3 tablespoons finely chopped walnuts
  • Powdered sugar
Instructions:
  • Preheat your oven to 350°F and generously coat an 8-inch round cake pan with cooking spray. Combine cake meal, potato starch, and nutmeg in a small bowl, mixing well; set aside.
  • In a large bowl, use an electric mixer to whip egg whites until soft peaks form. Gradually add 1/4 cup of sugar and continue beating until stiff peaks form.
  • In a separate small bowl, gently beat egg yolks. Slowly blend in the remaining 1/4 cup sugar on medium speed for about 5 minutes until the mixture is thick, lemon-colored, and forms a ribbon when the beaters are lifted. Add bananas, oil, and lemon peel, and mix well.
  • Gently combine banana mixture with beaten egg whites. Gradually fold in half of the cake meal mixture, followed by the remaining mixture. Add walnuts and gently fold. Transfer batter into a greased pan, spreading it evenly on top.
  • Bake for 25 to 27 minutes, or until golden brown and a toothpick inserted in the center comes out clean. Gently release from the sides of the pan using a metal spatula, then flip onto a cooling rack. Allow to cool completely. When ready to serve, cut into wedges and dust with powdered sugar.
