Whip up these delicious banana nut cookies using overripe bananas for a perfect breakfast treat!
Ingredients:
  • 2.25 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.33333298563957 cup shortening
  • 1 cup white sugar
  • 2 eggs
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon lemon extract
  • 3 ripe bananas, mashed
  • 0.5 cup ground walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare your baking sheets by greasing them lightly or lining them with parchment paper.
  • Combine the flour, baking powder, and salt in a bowl.
  • In a large bowl, cream together butter and sugar using an electric mixer. Add eggs, vanilla, and lemon extract, followed by bananas and walnuts. Slowly incorporate dry ingredients into the mixture. Spoon dollops of dough onto the baking sheets.
  • Bake in the preheated oven for 12 to 15 minutes until lightly golden. Cool on wire racks.
