Bake irresistible cookies that kids will love!
Ingredients:
  • 125g salted butter, softened
  • 90.00 gm brown sugar
  • 53.75 gm caster sugar
  • 1 egg
  • 100.00 gm traditional rolled oats
  • 75.00 gm self-raising flour
  • 75.00 gm wholemeal self-raising flour
  • 1 ripe banana, mashed
  • 125.00 ml roughly chopped banana chips
  • 100g dark chocolate, melted
Instructions:
  • With an electric mixer, whip up the butter and sugars until they are light and creamy. Mix in the egg thoroughly. Then, add the oats and flours and gently stir with a wooden spoon until everything is well combined.
  • Preheat the oven to 190°C/170°C fan-forced. Line 2 baking trays with baking paper, then mix in the banana and chocolate chips with the dough. Chill in the refrigerator for 45 minutes to slightly firm up.
  • Take 2 level tablespoons of mixture and shape into 16 balls. Arrange on baking trays with enough space between them. Gently flatten each ball with your palm to create a 5.5cm round shape. Bake for 12-14 minutes, switching trays halfway through, until they turn light golden. Let the cookies cool on the trays for 5 minutes, then transfer them to a wire rack to cool completely.
  • Arrange cookies on a sheet of parchment paper. Fill a resealable plastic bag with chocolate. Cut off a corner and drizzle chocolate over the cookies. Allow chocolate to set before serving.
