Whip up these irresistible banana cookies that are cake-like and disappear quickly, using ripe bananas and perfect for kids to assist.
Ingredients:
  • 1.5 cups all-purpose flour
  • 2 medium ripe bananas, mashed, or more to taste
  • 0.5 cup white sugar
  • 0.25 cup butter, melted
  • 0.25 cup chopped walnuts
  • 1 large egg
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 tablespoon white sugar
Instructions:
  • Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
  • Combine flour, ripe bananas, 1/2 cup sugar, butter, walnuts, egg, baking soda, and salt in a bowl until fully mixed. Spoon 3-tablespoon portions of dough onto a baking sheet, ensuring they are spaced 2 to 3 inches apart. Sprinkle the remaining tablespoon of sugar over the cookies before baking.
  • Bake until golden brown with set edges, for 15 to 20 minutes in the preheated oven.
